I have been drooling over some of these custom smokers. The cedar looks intriguing. Have any of you had some fire issues with the propane in there? I have one that has stainless interior and it is a greasy mess from pork ribs/shoulders etc.  I am worried about a big flame up, any comments?
Gamblin Guy, what kind of temps can you get and maintain in that smoker?

quadrafire Never had problems with fire in any of my smokers. With shoulders I just set a tin foil pan under it on the next lower rack. As for ribs and stuff that is not as fatty good size cookie sheet  ;)

Whitpirate, my neighbor has a client who is in the commercial kitchen business, he got them for me but I don't know where he got them.  I can ask.

Yesterday was the maiden voyage, after playing with the vents and the propane a little bit I was able to keep it right at 200 all afternoon.  The racks are 30x30, exterior dimension is just over 37 inches.  My neighbor is a hardwood floor guy so I picked up the hickory flooring for the interior and the vg fir for the exterior from him, barn wood trim is from Montana.

Like Blacklab, I use a drip pan to catch all the fat.

Mine. Made it out of left over cedar boards from my back porch build. Cold smoker currently but devising a way to connect an old Lopi stove to the rear smoke pipe for heat. Using an Amazin tray for smoking.

My son made this one from a pressure tank for a well and a 5-gallon LPG tank for the smokebox.
