I haven't tried any coon... But I imagine it couldn't be to far off from bear.... Same diet in some aspects

I would say similar to bear.

In certain parts of the country there is a good market for raccoon meat. Seems to be mostly east of the Mississippi.
Would not be legal here.

You would be very surprised how good coon meat actually is. IMO, it is pretty close to a well taken care of bear. No gamey flavor at all. My favorite way to cook them is just bake them like a roast with veggies and a few spices. I usually make cold sandwiches with the meat for the following week.  Don't knock it til you try it.

I will say that they area also similar to bear being that their fat is not the best flavor and if you have a really fat coon, cut all the heavy fat off.
My last coon I got a few months ago, my dad took it and spiced it up whole and smoked it for 4 hours and then baked it for another two. Wow! It was awesome tasting.

I cook it in the slow cooker and then either pull it off the bones for sloppy joes or toss back in with veggies for stew.  The fat definitely needs to be removed, no matter how little there is.

 The raccoon meat I have eaten was pretty mild. Ya' might be surprised what you'd eat when your hungry!  I wouldn't eat a garbage eating coon unless he was properly purged. I'd eat a clean and properly cooked coon over ANY processed food (pizza, hot pockets, TV diners etc.) and most restaurant food's ANY day. Coon, taters, carrots, onions, salt/pepper to taste, sage, chili powder and a bit of lemon zest in a crock pot. Where does your food originate?

I have a freezer full of food that originated the same place the coons do, but that doesn't mean I'll eat coon.  If I were starving I'd eat a lot worse than coon.  I'd say is prefer the negative health effects of a big mac rather than eat a coon.  If I had to choose.
