Ate Coyote... Now for Opossum!!

Well, after talking about it for years with my buddy it finally happened. The other night we broke down and tried Coyote. I shot one that morning and we decided to try it. I cut out the back strap and after I picked all the fleas of the meat we seasoned it up and gave it a shot . It was surprisingly really good . I wanted it to be nasty! I wanted it to suck! Well, it didn’t. I’m still not going to make a habit of eating them but it was worth a shot.


Tonight my friend is going to kill the opossum that he trapped the other night and we are going to try it. I’m gaging just thinking about it right now. Wish me luck. I’ll try and post some pictures as it is happening.

Well done all the way. I remember a guy one here that made coyote for his family and took pictures of it. He ate it med. rare at best. That was nasty!!!!

If no pics this go around then may I suggest a repeat with a new coyote and lot's of pics 


Once you've gotten past coyote and possum I think the next is nutria,  then on to Norway rats on a kabob.

Yup they are nasty! Not looking forward to tonight! Cant be worse than bear steak though.

Don't know what bear you ate but fall berry bears are every bit as good as some of the best beef I have eaten. After saying coyote was decent I have to believe your bear steak must have been half rotten. I have eaten parts of dozens of black bears and three different brown bears and I never had one that was worse than strong rut buck   

I ate river otter one time and it was not too bad, more the thought of what I was eating than anything.

Opossum is delicious! The best way to butcher is NOT to gut but to just carve the quarters off the carcass. That is were all the meat is at, AND it avoids the stinky disgusting process of gutting them needlessly. You end up with 4 leg and thigh combo's just like chicken but only better!

Its been a while since ive seen one but i whack everyone i get a chance!

I learned to cook possum from Wooly, an ol' boy down south who eats them as a normal part of his diet.  Here's what he says you gotta do....

"Ok you are supposed to feed him sweet taters in order to get the filth they normalcy eat neutralized. Then you add candied sweet taters also called yams around the poor baked critter to mask the possum smell. Never eat a possum you have not purged they eat dead meat as well a green persimmons you will pucker and puke."

I believe Wooly.  He's never lied to me yet.  He also says you have to cook them whole to get the real flavor of the critter.  Here's what it looks like.  Ours was a little well done.  It wasn't bad, though. I would never try coyote.  They eat too much dung.
