Smoking a turkey update 4/4/15 all done

Anybody have any tips or ideas to smoke a turkey wife wants me to try to smoke a turkey in the smoker I also have a 40 inch master built smoker it's awesome works great for me with a digital screen and remote

Brine it.
Any brine you'd like but brining is the key.
Search for smoked chicken and see what others are using for their brine if you need one. I know I've posted a few over the years. Also, no need for low and slow. Smoker temp around 300 and cook to an internal temp of 160. Pull off, rest a little, eat. If you want crispy skin, crank it up hot the last 15 minutes or throw on a grill.

Master built max temp is 275 well in mine it is. Anything you can put in a oven you can smoke. Just takes longer and taste better  :drool:

Thanks badhabit for the turkey101 link I got turkey thawing out now then maybe Friday ill mix up the brine and Saturday smoke it at 225 for 8-10 hours let u guys know how it turns out

If I go with a honey brine what chips should I use a sweet chip like apple or cherry or should I go with mesquite or other types or mix the flavors of chips

Always go fruit chips on birds. I cover with foil after a couple of hours. Another thing is to use a smaller bird if you can. The last 2 i did were over 20 pounds and it takes forever. Besides that they are not too hard.

Had the turkey in the brine overnite and now it's been in smoker today 4/4/15 has about 7 hours left in smoker its smelling good

So I woke up at 5am got smoker preheating to 225 preped the bird to put on smoker rack and I took the meat probe and stuck in in both turkey breast and it read 190 and thighs read 180 on the turkey 101 website it said breast needs to be at 160 and thighs at 175 so it's a little long in smoker Cuz it was high then that but it recommended up to a 12lb turkey and mine was 13lb so a lil longer was ok made sure it was fully cooked just had a bite and it's the right amount of wetness and it taste awesome

No it's not a wild bird my mom gave me 4 turkeys  she gets every year around the holidays every year she gets a bunch. there the butterball brand
