Just read through this whole thread. I've never actually gagged before, but I just did. Congratulations!
A long time ago, when I was living in Maine, I was told that the prisoners were fed lobster because most people felt it was barely suitable for human consumption. Ain't that funny? Well, crabs & lobsters are bottom feeders after all - and they command a darn good price at the market nowadays. My dad grew up down south - in Alabama, and has eaten possum, raccoon, squirrel, rattlesnake, goat, and probably some other things I can't remember. I sure would like to find a good cookbook that covers things like that. I've had goat and I liked it. If I have to trap and 'purge' a possum with sweet potatoes, then that's what I'm going to do. I'm not thinking of eating any mice, rats, or that sort of thing, but I can certainly imagine yote jerky. Then I need to find a good book on how to use the hides of the coyote and raccoons to make some clothing. I've seen coyote coats going for $1800 or more. There has to be some way we can learn to make good things from these critters we kill.
