Smoked Salmon
« on: May 12, 2015, 05:08:26 PM »
Decided to take some salmon out and make a big brine to smoke some salmon up,Have some with a little freezer burn on it and was wondering what anyone thought of just smoking it anyway. So would it taste fine ,bad or what?

Don't waste your time and good brine on freezer burnt fish.  It's crab bait now.

If it's not too bad or just around the edges you could trim it and still come out with a decent smoked product. Been done before.
