I can't tell much difference between deer, elk, and antelope when it's ground. Is that just me or is anybody else like  :dunno: ?

For me it depends on how much fat is added.  With 5% or more deer and elk pretty much the same.  With zero fat there is a definite difference as elk is much dryer w/less flavor.  We like zero fat elk for tacos and burritos and no fat deer for loafs and s'ghetti.  Our burgers and meatballs have 5% applewood smoked bacon.  Everything is good with bacon! ;)  Antelope always better for everything, fat or no fat, if eaten within the first four - six months.  'Lope don't seem to freeze as well.

Cooked Asian fluffy style...OMG!!!  Good thing it is hard to get or I'd be even fatter than I am already :o.

Moose and gator, then again one of the best meals I had was dintyMoore with a grouse cooked into it, but that might have also been the crown talkin

I have a bunch of squirrels around my place.  Hmmm.  You want to do this someday?
Oh man, squirrels are good eats.  Get them in the fall after the acorn drop.  They fatten up for winter and get that buttery taste.
Haven't found something I don't like yet.

elk, corn fed Kansas white tail, mountain lion, antelope, bear. I haven't tried moose yet.

If considering anywhere?
1. Moose (never had bad moose)
2. Fallow or Sika (females are best)
3. Bison (any are good, older bulls are tough but make great burger)
4. Whitetail (farm deer, either-sex, not in the rut)
5. Elk or Red Deer (females of either specie, pretty similar meat)


If only considering Washington?
1. Moose
2. Whitetail (not in rut)
3. Elk (not in rut)
4. Mule Deer (not in rut)
5. Cougar Chops or Bear Roast (tie for me on those two)

Kinda suprised that many people had elk lower on their list. Elk is number 1!

Like elk burgers with artichoke and mushrooms ground up in to burgers is my specialty.

My taste buds must not work very well. I can't tell the difference in any wild game. Elk, moose, mule deer, blacktail deer, whitetail deer, antelope, bighorn sheep- I've had all those and it all tastes the same. Certain animals may be tougher than others but I don't think that's dependent on species, more on age and possibly sex and time of year.
