Goose sausage

Just finished the first batch of goose bratwurst. One is just bratwurst the other is habenero brats. Will post pictures after smoked and sealed.

 :EAT: My brother made up a bunch of goose summer sausage last year.  :tup: Good stuff.

I think I would go for the habenero, That looks sooo good. Must have been a good year. mine always ends up as jerky.

Oh man ya, Pork would make that sausage even more mouthwatering!!

That looks exactly like something I saw on the trail last night.

Figured it was coyote......

I did a 50/50 pork to goose ratio. Jalapeņo is a favorite, just wanted to kick it up a notch!
