Homemade Italian and Breakfast sausage.

I've been making my own sausage with deer and elk meat for years with pre-made seasoning kits.  I want to step it up a notch and make some with just seasonings now.

Do any of you have any good breakfast sausage recipes that aren't sweet?

Do any of you have a medium or mild (I want the kids to eat it), Italian sausage recipe?

I've tried making my own seasonings in the past and came up with some pretty good ones.  I did it a few years and decided to sit down and figure out how much it was costing me.  I was amazed I could buy the premixed seasonings for cheaper than I could make them.  I use Waltons for seasonings.  Their hot Italian will knock your socks off on tasty.  Some of my customers swear it's the best Italian breakfast sausage seasoning they've ever had.

I am trying to get away from the nitrates and preservatives.
