Salami for backpacking?
« on: September 28, 2015, 02:59:07 PM »
K so I'm going on a 4 day backpacking trip. For lunch I plan on eating tortillas with cheese and salami. For the cheese I was gonna get a hard cheese like Parmesan and for meat an Italian dry salami in a log. Temps are warm, around 75-80 for the high. Anybody think this will be a problem? Just not sure how long cheese or salami will stay good for backpacking? Thanks!

I would think you will be fine.  Vacuum pack them individually if they are homemade ones.  Get a nice smoked gouda in the wax and it will stay fresh for you. and taste a lot better than dry parmesan.   :twocents:

One of the experienced backpackers makes a tortilla wrap with a few slices of pepperoni or salami and a cheese stick like a string cheese. Rolled up in a tortilla. 3 of them for lunch daily. Vacuum sealed, Will stay good for at least 4 days.

I will strongly urge you to make the butthole sandwiches instead.  Cinnamon raisin bagel, 4 tbsp peanut butter, 4 slices bacon, and honey. You'll be glad you did.

I second the vacuum sealing in your individual portions, especially the cheese.  You should have no issues.
Look man, some times you just gotta roll the dice

toss in a fist full of trail mix right in with the salami and cheese and seal a meal it tight? might work well.

I've kept salami and string cheese in a backpack for over a week with no issues in the same temps you described.  The cheese will get a little watery and the salami will be greasy, but it's fine.

Thanks for all the tips guys! Sounds like I'm good to go.  Does the bacon stay good for that long as well? Same concern as with the salami I guess is the meat going bad and getting food poisoning. Never heard of this type of sandwich. Sounds yummy!

most salami got nitrates and other preservatives in it,  not sure if the bacon retains that stuff after it's cooked or not  :dunno:

never lasts long enough to ever go bad

Do you make these sandwiches in the field? Or put them together at camp? Store em in a ziplock?

I've kept the sandwiches for 8 days.  They dry out some, but no worries with the bacon.  Your bigger worry is mold on the bagels, don't use Costco bagels as they don't have preservatives in them.
