I've had the opportunity to go to a camp in SD.  This article couldn't be any more spot on.

For southern all age trial dogs that is true. For northern foot hunted cover dogs it is not.

A dog competing in cover dog will spend the spring and summer chasing grouse and woodcock. If they hit the prairie at all it's to keep them on birds in the winter months or give them exposure to other species as well as keep them in shape.

It's pretty true for all AF and AKC HB GD, SD, and AA dogs.  The cover dog guys are totally different like you say.  They only trial on basically two types of birds, in a relatively small band of the country.   Those dogs don't need to go to camp because they are typically based near their trial grounds with wild birds.
