Do the turkey, you'll never go back to oven turkey. Skin the turkey from breast down to legs, coat with your favorite rub and olive oil fold skin back up and hold in place with toothpicks to keep skin covering everything and moist.


I would love too. Wife sais no, she wants a big one done in oven.. I did a pepper crusted turkey breast  few years back, turned out great. I got that recipe I off the Bradley website.
Tossing around the ribs idea.

 :yeah: Ill never cook a turkey in the oven again after smoking one

Take water chestnuts cut in half wrap with bacon Speer with toothpicks roll in light brown sugar and smoke/cook till bacon is done people will go nuts for them !

Jalapeno peppers, 4 plants of the large variety that went nuts. I did a few in the smoker with cheddar, but i think they needed something more.

Brine for smoked turkey. Enough water to cover turkey, about 2 gallons. About 2 cups of brown sugar, 4 cups of maple syrup. About 1 cup of salt. You can brine whole or cut up, I personally quarter. I brine for 24 hours. Throw in your smoker......Eat  :)

Brisket.  You could slice it as another main dish, appetizer, or whatever.  The turkey might go to waste though....

Popper's are really a blank canvass. You make it with your favorite flavors

1 8oz cream chesse
1 tube pork chorizo or beef you decide.
melt together on a sautee temp.
you can also use diced onions what ever you choose.

I usually slice jalapeno long ways. Stripping the seeds. having hollow boat. Fill with your ingredients. Top with your favorite shredded cheese. I usually use pepper jack  :twocents:
Set smoker 250 degrees. Throw in the poppers for hour maybe hr an half. Depends on your al dent tay.......lol

Or use same concept but use Italian sausage mushrooms cream cheese garlic maybe bacon for the top with shredded cheese. Hope it gives ideas, any ?s just post...... ;)
I do something similar, I use little smokies, jalepeno cream cheese, but I wrap in bacon before it goes into the smoker.

Decided on the jalop and bacon poppers. Still not sure what to stuff them with.

I do it with duck and it works out great. I am sure any other game would work.
