I make my best attempt to catch a steelhead every year at the river near my house right before thanksgiving and christmas , I put it in a little less salty more sweet brine and smoke er up with some alder and cherry and just set it out on the table by itself  with the other goods and its always a HUGE hit !

Decided on the jalop and bacon poppers. Still not sure what to stuff them with.

Spicy seasoned cream cheese and a lil smokie!

have always done 2 turkeys, (1) whole oven or deep fried and (1) butterball breast in smoker then baked.. the breast fits nicely in most small smokers and the oven is required to actually cook it after a few hours of smoking.
