Did some homemade Venison sausage today

I killed my Arizona buck only 2 weeks ago but with the *censored*ty weekend rain I wasn't going crabbing so I spend the day doing venison sausage. So happy as I nailed it and both are awesome!
I Did two different recipes, a garlic potato sausage which turned our unbelievable, and an Italian hot sweet sausage.  I did bulk as well as brats.  Did a test cook before to make sure the recipes were right. Won’t ever have anyone do my stuff again outside of small pepperoni.  The potato sausage recipe had 9 pounds of 50% vension and 50% pork butt/shoulder.  Added 5 pounds of yellow potatos no skin and I ran thru the grinder as well as 2 full onions, tsp of pepper, 1.5 tsp of allspice and 2.5 tbsp salt. Then added half cup of chopped garlic from a jar.  The hot sweet was Italian recipe that has a ton of stuff in it like red wine vinegar, pepper, garlic pwdr, basic, red peppers flakes, fennel seeds, brn sugar, oregano, thyme etc.

I had left over pork so I froze that for the next batch. I also made some labels from the computer which was easier than I thought.  And of course a pic of the meat buck!

Great looking buck!!  which hunt did you draw for?  I was down in unit 34A about the same time, nothing that size down there that we ever saw though, WELL DONE!

We do the hot italian also. It is about the best thing to do with game meat in my opinion.  We also make alot of maple breakfast sausage.  You should give the breakfast sausage a try.

hunt 3a 3c but huntinfool make It out like it was a trophy hunt but the locals can draw that tag every other year. seen some trophy wild horses though :chuckle:

OHH MAN!  You got that hunt, #1003?  That was our #1 hunt I am pretty sure.  I put in with 2 residents, 34A Oct was our #2 and we drew for that..  We are hoping to get the muley hunt next year as Family lives right up in 3C.  It is not an easy to get hunt for out of staters, only 125 tags per year..

So did you grind up everything but backstrap/tenderloins?, looks like quote a bit of sausage!

Ya we were right out of Heber AZ.  I have seen some big bucks come out of the unit. That Chedski Rodeo fire must of been unreal.  I would hunt off FS 139. I think that area has the better bucks.  We figured that out after I killed mine.  We were camped out off Black Canyon rd.  Only seen one big bull elk and I guess there's suppose to be some nice ones in there.
