Got a pork belly at costco and decided to make some Bacon I used the Morton tenderquick recipe for bacon its a tablespoon of tenderquick and a teaspoon of sugar per pound of meat let cure for 7 days and smoked with hickory

Wow Huey that looks awesome! Did you cut it by hand or through a meat slicer? Those are nice straight cuts. I have a pork belly in the fridge myself. Will be ready to smoke in 3 more days.

I hand sliced it figured it would be faster and one less thing to clean up when i was done a nice sharp knife helps :-) I picked up another slab yesterday and will cure tomorrow what a deal 9 pounds of Bacon for 26 bucks :-)

Yep that's where I got mine, can't beat that price plus end results beat store bought bacon any day!

Looks great as always dogtuk. I do the same thing with cutting by hand. Two or three slabs then the slicer coming out. Costco belly prices went up in my area from $2.29 to $2.79. Still worth it for the end result though.
BTW I still haven't tried tender quick
just haven't. Maye next year

I just bought a smoker and the same pork belly. What is tenderquick and where do I find it? Am looking at trying the same thing and maybe some pepper bacon as well. Any tips and advice are much appreciated since this is my first time with a smoker.
