I use a KUIU ultra 3000 as a day pack. If you want smaller the 1800 ultra would be a good choice.
I love my Kuiu Icon Pro 1850. Great day pack with load hauling capabilities.
I used the x2 last hunting season. It was comfortable but I'm thinking of going a different direction this year. It does squeak slightly though from the bag rubbing on the frame. Honestly, get yourself an Exo Mountain Gear 3500 and you're set. Compresses down to a lightweight day pack and can handle 100 lbs of meat.
Were you elk shed hunting or deer? I like a day pack for size and when deer shedding it works good. But a decent load of elk bone can add up quick. Add some miles or elevation and you may be wishing for more suspension. Just a thought. One of the features i did like about my 2200 when i had it was access to the main compartment without having unload and reload antlers. Of the packs you mentioned the eberle would be my choice for a "do all".
Looking more at the Kuiu packs . What's the difference between the Icon Pro and the Ultra ? Are the bags just one big bag or is the smaller pockets/ pouches to keep gear separated ?

My icon pro 1850 has plenty of pockets. The biggest is the horseshoe zip to allow full access of anything in the pack at the bottom. I really like it. The icon pro is basically the bells and whistles package, as far as I understand it. Just some more extras. U won't regret getting one!

You can buy these separate for the ultra. It also has more compartments in the bags. For day ise only go ultra. For extended go icon suspension and ultra bags
