This recipe has ingredients that most people have in their house already. I'll pick up a couple of chicken breasts out of the deli or a rotisserie chicken to use in this. It's super easy, super flavorful and amazingly filling.

We do a lot of large individual dinner salads. Like I mention earlier, the salmon Caesar salad is super easy and filling. Obviously a guy can substitute it with other kinds of fish or chicken too.
 Cooked chicken breast on bibb, romaine or leaf lettuce with avocado, tomato, red onions and croutons, with your choice of dressing.
     "                              "                 sliced up pears, bacon, avocado, red onions, walnuts or pecans, croutons and blue cheese dressing.
     "                              "                 sliced up left over steak, tomato, red onion, blue cheese crumbles, croutons and blue cheese dressing.
Or a mix and match wildcard cobb salad using Iceberg lettuce with your choice of copped up lunch meat or left over meat, boiled egg, shredded carrot, tomato, pickled beets, garbanzo beans, bacon, onions of any kind, avocado, cucumber, cheese, olives, zucchini, sun dried tomatoes, red or green bell peppers, croutons, nuts, etc. I prefer blue cheese or ranch dressing on this kind of salad, maybe a thousand island or Russian would be good too.
The possibilities are endless with the big dinner salads.

Tuna bagel

One can tuna mixed with your choice of sweet or dill pickel relish, mayo, a little dab of mustard and some pepper and red pepper flakes.  Spread half the mix over each half of a sliced bagel.  Place in the over at 350 for 10 minutes.  The last couple minutes melt a slice of cheese over the top.  Absolutely delicious.....one of my favorite quick easy no mess dinners. 
If you don't have a bagel, an English muffin will do as well. You could add a slice of tomato on top before the cheese, that's good too.

One package chicken thighs, two cans cream of mushroom soup, put is all in the crock pot. Serve over noodles or spuds or tice

Love that with rice. Also very good with 1/2 mushroom soup and 1/2 cream of chicken soup.  :tup:

Instead of chicken you can also fry meatballs and put in the soup with rice.

One more before I get lost. English muffin, pizza sauce and pizza toppings (keep it simple) and cheese of your choice. Slap them on a cookie sheet and bake them for around 30 minutes on 350 or if you're in a rush, bump up the heat for less time.

If quick and easy is your true goal, you can't beat meal prep man. Take an hour or two on a Saturday or Sunday evening and cook 2 or 3 different meals in bulk sizes and then package them for individual use. My freezer is full of them and it makes life so much easier.

Once a month or so I cook a giant batch of spaghetti and then vacuum seal it into meal sized portions. Its great to grab a couple out for dinner, or bring one to work for lunch. Same goes for chili. Huge batch, and then get yourself a bunch of the pint sized mason jars. Fill them to a half inch from the top, screw the lid on, throw in the freezer. I have 10 jars in there right now. Makes for great hunting meals too during the season. Its already frozen, keeps in the cooler great for a week +

At the beginning of any given week I will also grill 6 or 8 chicken breasts/thighs or a couple pounds of elk steaks. I can add them to some pasta and pesto for a quick evening meal, or just to chopped veggies and romaine for a great salad.

frozen salmon patties from costco.  Throw them on the grill for 6 minutes serve on a bun with sliced tomatoes.  quick, easy, no cleanup.  Just did it last night and the kids enjoy them too.

Cut up some steak into stew size chunks and soak in teriyaki marinade overnight/all the next day. Toss the steak and marinade into the oven for 20 minutes or so, or until cooked to your liking. While the steak is baking, boil some elbow noodles, and make up your favorite brown gravy. Toss the steak & gravey on the noodles and follow up with a splash of teriyaki sauce... :drool: I made this for the first time years ago when we brought our first kiddo home from the hospital. I remember wife being a little skeptical of my concoction, but it has grown into a regular meal around our place.
 
I felt like a one legged cat trying to bury a terd on a frozen pond!

The tuna bagel sounds good...I'll try that....most of the rest is a regular around my house  :chuckle:

The tatertot casserole sounds interesting...what all do you put in it?
Ground beef and onions, bag of tater tots, sliced mushrooms (I like fresh) can of sweet corn (drained) cream of mushroom soup thinned down with milk, and cheese on top is how I make it

This time of year with the favored Vidalia onions...Mix diced bear ham , diced onion, two cans of Bush's black eye peas, a little salt and pepper to taste.  Toast some bread and spoon beans over the top.  Takes less than 15 minutes for one of the favorite meals around this house.
He asked, Do you ever give a short simple answer?  I replied, "Nope."

I really like cod for weeknight dinners. Economical, fast cooking, and you can make it a million different ways. I do this recipe a lot, but use cod instead of flounder

Pita pizzas, just stick them in the oven (350 for a few minutes till the cheese bubbles) with your favorite sauce, cheese and veggies. The nice thing is that they are individualized.

Spaghetti squash with manwich sauce and burger mixed in and broiled with some cheese on top tonight. Weird but tasty
And watermelon as a side :chuckle:

OMG I thought I was the only person doing this minus the cheese.  I can't eat wheat or soy or dairy but really wanted sloppy joe so I put it on spaghetti squash and my sister thought I was weird.  that sauce is also good on roasted cauliflower.

I mostly do meal prep for the week on one of my days off so I have pre prepared rice, beans poached chicken and just have to chop some salad veggies or steam veggies.  My favorite breakfast is a couple bites of chicken and half an avocado.
