We actually don't have a recipe. Usually a mixture of ground meat (beef or pork), egg, breadcrumbs, onion, and whatever else sounds good. I always have to google the temperature and time for typical stuffed peppers.
It's like you all are speaking a differently language. Simple, Easy, Quick. I don't understand these words. 
I've been reading your posts, which look delicious and inspirational.
I hope to try some of your ideas soon.
Also, that reminds me of a sign that a friend of mine had "If we are what we eat, I'm fast cheap and easy."
