I usually gut it and sow the elk back up for the drag out (if I don't debone it). They seem to concentrate on the gut pile once its out.
Deboning,....well that's different. Like others mentioned, we use those wasp traps in camp, work pretty well. We've had holes drilled right into the hind quarters before from those yellow jackets. I always say I would hate to get hurt out there with an open wound and not be able to walk, those dang things would eat you alive.
