Christmas Dinner

my brother and I always cook Christmas dinner.  We try and do something different but fun but fancy every year. We've done seafood cannelloni, Pork crown roast, Ravioli, Cornish game hen's.  And some other things that I can't remember.
I'm brainstorming for this year.  Anyone ever do a goose? How about Turduckhen? Osso Bucco?

Turduckhen is really good.  I always like prime rib.  But I think I'm going to do a brisket this year.

I'm doing a prime rib roast in the smoker this year for Christmas day.  We have been doing a traditional American-Italian feast the last few years for Christmas Eve.  It's called Festa dei sette pesci, or Feast of the Seven Fishes.  There's many variants of it but we've just been making up our own.  You basically start with 7 different kinds of seafood and go from there.

I'll do a small prime rib about 3 ribs in my BGE seasoned with "3 Pines" Holiday prime rib recipe. I'll also brine and smoke about a 10 lb turkey. I use the Cookshack turkey brine recipe. I've done whole smoked canada goose which everyone likes but I don't always have a fresh goose to pluck and prepare.

Roasted chicken and gravy with potatoes and veggies; dessert. I play piano for an old folks home on the holidays, so I have to cook when I get home. Nothing too fancy but it's always good. We eat about the same thing on Thanksgiving, too. Next year, I plan to have some elk on the table.  I'n the past I've done roast duck or goose, prime rib, lobster. Those were the days!

what is the internal temp you smoke the prime rib to ?  after you have reached that temp what do you do with it ? Foil, towel, cooler or ? to keep the temp up...thanks   i think my temp probe may be off a bit cuz mine always comes out just a smidge rare

I've never cooked one, but my buddy is a chef and he puts them in a towel inside a cooler to rest.
