I'll hafta do try making some bear jerky. My first and only bear, a few years ago, I threw a chunk of backstrap on the BBQ. Marinated in Yoshidas. Man, that was real good.

Can't beat that breakfast sausage tho!

I had Olsen's in Enumclaw make a bunch of breakfast sausage for me 5 years ago. Any of you guys done black bear bacon?  I'm thinking about making my next bear 100% breakfast meats.
