Yep, what you think they are. Cooked in sage brown butter, shallots and pine mushrooms.

Yes they are, and they were really good. But honestly I don't remember what all I did. I sometimes don't write down my recipes. Or maybe I had one too many glasses of wine.

Keep the balls somewhat frozen and remove the outer membrane carefully with a knife. Cut into a few rounds per testicle, think half the depth of a sea scallop. Continue to let it defrost. When fully defrosted....
Take about 3 tbs butter over med heat and melt, kept heating until it foams (add a few sage leafs now) then will start to brown. Do this for a few seconds more after you see brown bits developing and remove butter and sage from pan and set aside. Add another tbs of butter over medium high head and add one diced shallot and cook for 3 min and then some sliced mushrooms (crimini will be fine) and the cut testicles. Cook for about 3 min and flip testicles, while continuing to move the shallots and mushrooms around to prevent burning. Plate shallot/mushroom/testicle mix and pour sage brown butter over the top.

ok you lost me on this one...... sounded great right up to the brown butter on the balls part.  (delete that emoji)  sorry !
