Salmon and some imagination

Took some coconut rice and used it as a bed for some king salmon fillets, little neck clams and topped it with some Thai red curry sauce. Then wrapped it all up in a banana leaf and cooked it out on the bbq. Turned out great if I do say so myself. Had the whole family together so decided to work out the new bbq.
