Anyone use the Cajun Injector Electric smoker? Looks simple, and thats what I am after. I have used a Little Chief some, and was never quite satisfied with the results. The Cajun Injector looks very simple and easy to maintain desired heat. Any input? Biggest reason for the smoker is for doing up salmon/Kokanee/trout. Ribs and brisket are on the radar as well...

I bought a Green Mountain pellet smoker from the local SW a couple of weeks ago. I like the digital thermostat for adjusting temps. If your Cajun Injector runs at 150 and below you may have a real good fish smoker. I always had better results on the Little Chief than the Big Chief as the Little Chief didn't put out as much heat.

I have on. Just did some trout yesterday. 2 issues I have. 1- constant heat control, I set it at 140 and it heats to 155 or 160. Then the burner shuts off until the temp drops to about 130. Get no smoke until it kicks back on, and that can take a while. Makes it difficult to control the amount of smoke you want. 2- The pellet tray is kind of thin and can warp on you. This results in inefficient burn of pellets. I have had to remove it a few times and flatten out the bottom. Kind of a pain in the middle of the smoke process.
Other than those two items its been OK for the price. Got it as a fathers day gift a couple years ago. Easy to maintain, clean and store in the she during winter. I find that if I smoke on a day with not much else going on, I can keep an eye on it and it will turn out an OK product.
That said, if I was going to replace it, I would probably not get another. Good luck with your decision.

Got a propane Char Broil smoker. Some of last years sockeye and kokanee are loaded and our first attempt is under way!

For the same price or a little more, get a bradley or a master built and use a quality smoker...

:tup:Fish came out a little dry, and a little light on smoke flavor. It is very good though. Hard to keep the temp below 250deg on lowest setting. Learned a lot on the trial run...will do another batch in a few days.

One of my smokers is a propane great outdoors. I think smokey hollow makes them now. Great smokers. If you can use the propane valve to adjust the flame for lower heat. Also you can always crack the door to lower the temp. I think your really gonna like your propane. Enjoy an good eats.

It tastes like I have the trout/salmon recipe dialed in. Smoked Kokanee and Cougar Gold cheese...Delicious! I have smoked a couple tri tips and a london broil that were just superb!! If you haven't tried this, it is a must do! Once the middle hits between 140-145deg, pull it off and cut steaks. Oh my
so good. I like doing this more that buying steaks and grilling them up on the BBQ. I am using a prime rib rub that was low cost at Harvest Foods, gives a good flavor with apple wood chips for smoke.
