I have used hank Shaw's corned venison recipe a few times. It's one of my favorite things to do with my game meat.

My wife does elk quite a bit. I took a corned bear ham to a Christmas party about thirty years ago, way before I was married, and after the party someone came up and said: That was great, I have never seen corned beef with a bone in it before. I said: Neither have I.
