What Woods do you use for your wild game?

I am wondering what woods people like to use for the different wild game that they cook.   Finding info on Beef, Chicken, Pork is easy enough, but what do you guys use on your wild game?  If you mix woods for specific things, let me know as well.

Venison (different for white tail, vs blacktail vs Muley?)
Elk
Moose
Bear
Cougar
Turkey
Grouse
Duck
Goose
Salmon
Trout
Bass
etc, etc...

Venison-Alder

Salmon-Apple and Cherry

Wood Fired Pizza Oven-White Oak

We live in the PNW, smoke with the woods that represent that.

On special occasions I smoke with grape wood. Family vineyard perks.

Call me weird, but I use Hickory or Mesquite for everything I cook on my pellet grill.

Yes mostly for smoking.  NW wood flavors is great, but I am sure there are also traditional woods used around the country for certain game to enhance the flavor beyond what is locally available here.

Deer and  elk = mesquite or Cherry

For those that you have used multiple flavors for a meat have you tried mixing them or just running one or the other?

deer/elk 50/50 hickory apple or 100% hickory. Pecan is also a great subtle smoke for birds and pork.

I haven't smoking meat for very many years but so far I have mostly used local alder, which I chip myself, and really like the flavor on venison, salmon, trout and even pork.  I have added a handful of mesquite part way through some venison roasts but not enough to tell much difference, and I'm drifting back to straight alder.   

I flat out love the taste that Rudy's barbecue chain in Texas produces and I understand that they only use oak.

I like apple or cherry for any red meat, beef, venison, etc.

I like apple or cherry for any red meat, beef, venison, etc.


 :yeah: it's all I use really, I have some orchard farming buddies so the supply keeps me from buying other stuff....
Just tend your own and live.
