What cut of Beef is this?
« on: August 09, 2017, 09:18:26 PM »
This roast came from our steer last fall. Somehow, the part of the wrapping paper that was labeled with the cut came off. I took it out to thaw earlier today thinking it was a pack of T-bones. I think it may be a rib-eye roast but not sure since it isn't long and I had rib-eye steaks. I am usually pretty good at identifying them but not sure what this one is. Thanks in advance.
I hunt therefore I am.

In the second photo there is a rib bone showing . In the center of the cut there is the fat layer that is in the neck gland and then in the top of the photo it appears to have part of the end of shoulder bone.

Yeah, something from the chuck primal.  I'd braise that low and slow for a few hours with some veggies.   :EAT:

I delivered tens of thousands of pounds of full chucks to grocery stores that would cut them into blade roasts and chuck steaks for weekly specials.
