Summer Sausage Refrigeration

I made some homemade summer sausage. Used a kit. Heated in a smoker to 153 degrees. It came out great.  Here's my question. How long would it be good without refrigeration? The stuff in the store lasts a long time. But, I suspect it has additional preservatives. I have a frozen chub of it and would like to send one to my kid through the mail. Could I just put it in a 2-day envelope frozen and expect it to be OK? Thoughts?

Might be okay...

Is it just paper wrapped or vacuum sealed?

How much, volume-wise are you sending?

One option to think about is a Priority Mail Flat Rate box, if you are sending a fairly big amount, can add ice packs and as long as it is Flat Rate box, the extra weight of the ice packs wouldn't be any additional cost.
It is better to be consistently incorrect than inconsistently correct...

That box is a good idea. I have it vacuum sealed and currently frozen. I like the idea of stuffing a couple ice packs into the box along with it. It will probably end up being an expensive piece of summer sausage. :chuckle: I've got a 22 year old that is feeling home sick and would like a care package, LOL.

I'm kinda thinking vacuum sealed you'd be fine with no refrigeration this time of year.
