I just got my first euro bear skull back. I opted to do just the skull as I have nice piece of wood I'd like to mount it to. Two questions though...
1) Best way to secure the jaw? I was thinking hot glue...
2) Best way to mount skull to my piece of wood?

Not sure about securing the jaw, but if you don't post at least one picture, you're facing a lifetime ban and unlimited internet shaming from hunters everywhere.

Here's an option...
Super glue the jaw together. Secure with 2 screws from the under side of the plaque. Hang the skull from a 3/4" dowel through the the brain cavity and rest on the jaw hinge. 1 screw from the back side into the thickest part of the skull to hold it in place.

On my bear skull I drilled a hole in the back of the jaw hinge,( not all the way through ) the size of a 16 penny nail. Then I cut a nail to the length of the depth of the hole plus a little. That way it can either be closed or opened.
