What meat do you guys take off the bears?  Sausage from quarters and tenderloins for steaks or do you try to take as much as possible like a deer or elk.  Ive never harvested a bear before, sorry for the newb question

All of it, just like a deer or elk.  Good stuff.

Spring bears are way better then fall bears and a lot less greasy. Mine have all been good and the only time I hear of bad ones is the bears that get into the skunk cabbage. Never killed one in it but I can imagine it would make em a little ripe lol
  :yeah:
We shoot most of our bears in the spring they are better and not so dang greasy!

Saw someone made corned bear, that's what I want to try.  I've shot two Spring bears and eaten many others, even ones shot near sucker spawning streams, all in Ontario. They all tasted great. I shot a September bear in OR many years ago, also delicious.

My Mother-in-law who is highly hesitant around any wildgame meat recently went back for a second helping of slow cooked spring bear roast from the crockpot.
The lazy do not roast any game, but the diligent feed on the riches of the hunt.

Thanks for all the replies.  Think I'll give it a shot this year.
