When you put them in the oven what temp setting do you do? Had a cook on the tug that put the oven on self clean and the cast iron frying pan looked brand new when all done.

Anyone hopping off the cast iron train for the stainless train?

I have 3 cast iron skillets now. A 12", 8" and 6". I'll keep the smaller ones for sure but not as happy with the 12". It's the one I've had the longest and I'm starting to notice how uneven the cooking surface is. The center of it is a high point. Cornbread burns more in the center, uneven sear on meat, eggs slide away from center, etc. Maybe a "high quality" cast iron skillet wouldn't have that issue but I'm kinda over the nostalgia of it.

I always thought stainless was inferior and "sticky", maybe due to having super cheap pans. After watching an excessive amount of cooking videos lately I'm giving a quality stainless frying pan a go. I imagine there's a good reason stainless is used in most professional kitchens. Also, I can't get the words, "fond" or "deglaze" out my head.

I've used stainless a bit, but have been wanting to get some carbon steel a try. Mostly for cooking in the wood fired pizza oven. Also some really nice copper and aluminum core stainless pans. Pricey, but significantly better heat distribution than cast iron.

Decided to use a sand blaster with walnut media, it got the big stuff out good. Just doesn’t get the deep stuff out. So I’m going to electrolysis to finish it.

I have a AB&I skillet in the electrolysis right now I’m doing for a Christmas present for my daughter.

Just a quick glance looks like self cleaning oven, fires, and grinders have been brought up. If it's a vintage piece or something you value and your looking for advice please do yourself a favor and don't do those methods. You can't bring a piece back from the damage that's all too common with these methods. Plenty of people out there that can restore it properly if you don't want to take it on yourself.
