This was from Hawaii. Friend gave it to me
133 in the sous vide for 2.5 hours with fresh pressed extra virgin olive oil, fresh thyme and rosemary, salt and pepper

Fallow and axis deer are by far the 2 best wild game animals I have ever ate.
I am going to thump a couple does on my next trip for the freezer!

Did you rest it before searing? I haven't been able to take my deer or elk over 130 in the sous vide without over cooking, I wonder what the difference with axis deer is..

Rested for 30 min before searing.
I have done a few different dishes (mule deer) since I got my sous vide and haven't had any trouble with overcooking. How thick is the meat you are cooking? If not thick enough any meat is tough to get right with a SV
