Not sure I will be hunting with mine.....but still need a good bullet for the extremely rare chance it is ever needed for self / home defense. I will also make a range load with cheaper rounds to bang steel with.

Subsonic 300 is a poor choice for HD, just use full power supersonic 110-125gr loads for that. The subsonic stuff is more of a novelty and has some very niche applications (i.e. hunting quietly just because you want to) but the full power loads are much more effective for everything else. On expansion of subsonic loads - it's not about just picking a "good" bullet, you need to pick something specifically designed for subsonic expansion. Most hunting rifle bullets (including the premium stuff) don't expand at all at subsonic speeds and are not much more than a ballistic ice pick unless you hit bone. The recommendation for the 194gr Lehigh is a good one, and arguably the best other than cast hollow points you can make yourself.
