Spoils of the hunt(s)

My boys and I finished our work for the year in round 2 of sausage fest.  The first round yielded burger and breakfast sausage, round two summer sausage, Landjaeger and Goose pastrami.  All of which turned out great and very tasty.

how’d the landjaeger turn out? Been pondering the idea with some elk.

The landjaeger is very tasty. I used sausage maker seasoning added some carraway seed stuffed squeezed between cookie sheets over night smoked and hung out to dry. I think it’s cheating a little from a true landjaeger
