Properly cooking bear meat
« on: June 03, 2018, 06:54:33 PM »
https://honest-food.net/on-trichinosis-in-wild-game/

Thought I would share this article with all the bear hunters here, as it seems timely. I shot a pretty good cinnamon bear Friday and just finished having BBQ tenderloins for dinner. Over the weekend the subject of trichinosis in bear meat came up in conversation, so before cooking up the loins I did a little googling and found this article. I've shot a lot of bears, and never had an issue before, but this was very interesting so I thought I would post it here. Also follow the link to the Steve Rinella clip for a laugh.

A friend contracted trichinosis from eating fresh pork in Central America, Honduras I believe.
As long as we have the habitat, we can argue forever about who gets to kill what and when.  No habitat = no game.

Tried cooking my spring bear, but weirdly enough it just tasted like paper and ink soup :dunno:
