This might be the best batch yet:

 :drool:
recipe?

Dry rub:
4 cups brown sugar
1 cup sea salt
Dash of cayenne pepper
Tbsp. of ground cloves

Cover salmon with the rub then into zip lock bags – force out as much air as possible. 
Into the fridge for about 14 hours, turn the bags over every now and then.
Rinse, then on to drying racks – back in the fridge over night
Smoke with alder chunks

Is the back in the fridge overnight after rinsing/drying to help form a pellicle?

exactly.  It doesn't take all night but I'm not going to get up in the middle of the night to smoke it.

WDFW updated the quota count, looks like we still have quite a bit of time in MA10 and MA11.

Nothing came home in the cooler tonight. Released 6-7 undersized Kings and unfortunately (or fortunately because I hadn’t caught any natives this year) released two natives that were 20-25 lbs.  so nothing in the freezer but some damn fun fishing

its quicker in the fridge if you have room is the only issue.  i rarely do so it takes 3-4 hrs of so with a fan on the counter

Biggest for me this year is about 14 but did catch a few bigger ones that of course we natives and had to be released.  Oh the pain watching them swim away

Hey guys...  went east and fished for Smallies the last four days.  Was thinking about salmon the whole time but it was still fun.

Are things still going in area 10 or should I be joining my buddy on his boat down in 11.

Would like to fish my new “home” area in 10 a bit more.  Any word?

Fishing was still good in MA10 Thursday - Saturday, but I spent the last few days in MA7.  I've heard good things about MA11 though too, one report from yesterday said they got into a bunch of coho around Des Moines.

Did ok on Sunday. Started out off the oil docks - a few small natives. Left and fished Jeff Head - 12lb hatchery King and a smaller hatchery silver. All the silvers have been cookie cutters for me, 4lbs.
