Yes. I've done this dozens of times, though zucchini will never replace eggplant in good old Parmesan.
My favorite thing to do with zucchini?
Tempura. And while I'm at it with my big bowl of Tempura batter, I manage to cook up some Japanese Eggplant, Broccoli, Asparagus spears, Carrot & Onion fritters, Sweet Potato, Green Beans, White or Crimini Mushrooms, and of course - Tiger Prawns. LOTS of Tiger Prawns.
