Unless really cold, sour can happen quickly if you don't get it off the bone quick enough..in as little as an hour or less..they hold heat like nothing else

I see some guys take bone in hams, but seems like if anythings going to hold heat next to the bone its the hams. Especially if you've got a few hour pack out before you can get it cooled off.
I'm curious in wa state do you have to take the meat ?
