Hot Time In The Cold Ground Tonight

Nothing warms the heart on these cold days like a good old "Hot Stew from the Old Dirt Oven". (That's if you can get your hole dug in the frozen ground).  :o

Old Dirt Oven Stew    (Just like Mama used to make)

2 pounds Wild Stew Meat (Your Choice, Cubed)
2 tablespoons Oil (for frying the meat)
2 tablespoons Flour
Salt and Black Pepper
A Shake of Dried Red Pepper
2 large Onions (chopped up)
1 Clove of Garlic (crushed)
2 tablespoons Tomato Paste, (mixed in small amount of water)
1 1/4 cups  of your "Favorite Beer"
2 cups Chopped Carrots
A Fresh Thyme Sprig
Fresh Parsley, (as a Garnish)
12 Baby Red Potatoes (Steamed)

Cut Meat into bite sized cubes.
Shake the Meat Cubes in a bag containing the Flour, Salt, Pepper and Dried Red Pepper.
Heat up 2 tablespoons Oil in the Dutch Oven and Brown the Meat Cubes
Pour the Beer into the caramelized Meat and Juice, (Stir to blend)
Add the Onions, Crushed Garlic, Tomato Paste, Carrots and the Thyme
Stir up and adjust Seasonings to taste
Put on the Lid of The Old Dirt (Dutch) Oven and set into a hole in the ground covering the Top and Bottom with a few Coals and finishing up by covering it with dirt, (The Stew should be ready to eat in about 2 to 3 hours.)
Garnish the Stew with Parsley and Serve over steamed Baby Red Potatoes
