Bought a St helens corned brisket about 4wks ago. Been in frig since purchase. Today I split and making smoked corned beef with the small flat as the corn and point pastrami  :drool:

Took it off at 9:30 last night. Let it rest till this morning and started bagging. A little salty still good though.

Couldn't find any place called "CASH& CARRY" around anymore, maybe it's this place?  :dunno:
