Pull them out of the freezer and par boil them then smoke, works fine with frozen ribs  :twocents:
To hunt and butcher an animal is to recognize that meat is not some abstract form of protein that springs into existence tightly wrapped in cellophane and styrofoam.

Dang those ribs look good.  I need to do a combo pork and beef ribs smoke.  Sometimes it is hard to know what I prefer until I take a bite of each.

OK, I will readily admit my stuff doesn't compare to Kc Kracker's but here's a couple of those elk ribs.

Turned out pretty good. A little crusty on the outside but kept them from drying out on the inside. Cooked them for a long time so they turned out fairly tender. I may have got a bit too much insanity sauce in the barbecue sauce but I like them a little hot.
