Looking for Pork Fat

I like to mix some fat with our grind. Friend did not raise pigs this year so I am on the look out for some pig fat. I dont really care to add some random store bought mass produced pork etc. to my game meat.

If anyone is raising, or butchering pigs let me know. Looking for 10 lbs or so.

Just a guess but you may try a local grocery store with aa butcher shop, and there is another butcher in PA, Sunrise Meats that I have used before.  I don't know if they would have the pork fat, but may have someone they might get theirs from.  I know you can order (last I knew anyway) pork fatback from Minter Meats in Bremerton.  I believe it was a 5 to 7 day wait, and it only came in bricks of about 50 pounds if I remember correctly.  When I don't need much I go to Cash and Carry (new name now) and but the boneless pork butts.  I'll trim off the big chunks of fat for my grind and then just grind the remaining for my ground pork for the freezer.  My grinder likes this time of year!!!

Another option if you can't find pork fat. My butcher has been selling me grass fed beef bellies at 2.49 a lb for the last two years. I really recommend it. I know it is a little expensive but I think that it makes a big difference in the flavor and consistency of my burger and sausages. At this point the only time I am adding pork is when I make meatballs. I love the fact that you are trying to find locally grown pork fat to add to your game and  I hope you can find some pork fat but if you can't you might want to try this.

Interesting idea Jager.  Any thoughts on using porkbelly?  I think it is similar price normally and Costco often has it on sale for maybe a little cheaper?  I thought I saw $1.99 a month or so ago.

I love using pork belly in my game sausages.  It can get expensive though.  So I typically do a mix of pork fat and pork belly, to average out the cost a bit.   

I typically keep ground burger just pure game meat.  But for sausage, I will mix in pork fat and pork belly.   For waterfowl, I usually like 80% game meat/20% pork.  For elk sausage, I usually due somewhere between 80-90% elk meat and 10-20% pork.   And have my own recipes for seasonings to mix in.  If I can ever manage to fill my bear tag this year, I will probably do 30% pork ratio as I'm assuming a late season bear flavor may be helped a bit with the extra fat in the sausage.

Paid $1.99/lb on Monday for one at the Clarkston Costco.

I think that Pork belly is a great option. I just really like the grass fed beef belly, my boys and I killed one elk and three deer this year so I bought  40 pounds of belly, it cost me $100 some I did 80-20% (burger) some is 50-50% (snack sticks) the flavor of it all just seems to be so much more in the realm of what I would want for game. Last year was the first year that I did it and I've been glad about the change. I've also thought about using lamb fat if I could ever get my hands on that, I think that would give a great flavor profile.

Someday I want to do venison confit in lamb fat.

CLARKTAR, There's plenty of "Pork Fat" in Olympia......or have you tried "Sunrise Meats", just down the road from you? They might sell you 10 LBS of Pork Fat.
(We get ours from any local Asian Grocery Store in their Meat Dept).
