Hot cast iron, butter and garlic, scallops 1min 32sec a side.

sous vide bear for 4 hrs, sliced thin fried in butter in hot cast iron 40 seconds a side.

I have been playing around with timing of the flipping and found 1:32 the perfect time on these posted.  Perfect cook and melt in your mouth with no overcook chew at all.
Warm the pan until the butter just starts to brown and slight smoke, throw them in and start the kitchen timer. 
The bear added a lot to the bite.  I was blow away at the combo in a single bite.

Chris, thanks for the scallops. I believe I was the last delivery.   10# should hold us over for a while.  Best tasting scallops I've had in a while.  Fine dining.  Got me a few more points with my better half. :tup:

Tonight's batch was just under medium on the stove dial and exactly 1:36 per side. Perfect consistentancy with zero chew.

Super simple, just a light seasoning and then on the grill.  I wanted to be sure I had a good chance to get the true flavor the first time I had it.  I would agree it is one of the fattest fish I have had, it's kind of like ordering sea bass at a good restaurant and then making it 2-3 as good as the best you have ever had.
