Has anyone seen this before?
« on: January 03, 2020, 09:30:46 PM »
After really looking forward to eating an elk roast tonight, I found something I have never seen before. As you see by the picture, there is discoloring in the center of the meat. This spot ran the entire length of the roast, about 10 inches. Anyone have an idea of what it is? My thoughts, possible gland?, spoiling, or  :dunno:.

Probably just a discoloration in the muscle....sometimes a discoloration is just that...like a birth mark on coloration on skin, it would be rare but could happen in muscles too. I wouldn’t worry about it, just eat it.

Odd for sure.  Where, body wise, did the roast come from?

Curious what you mean here,  :dunno:  "Blemish bruise vein".....I've never heard that term. Do you mean the vein is blemished or bruised???,  or do you mean......Its a blemish or bruise or vein???

I'm a meat and potatoes guy that worked in a grocery store for 27 years, plenty of experience both processing and eating meat of all kinds,  :chuckle: Never seen something like the OP's picture. A bruise would typically effect the muscle tissue from the outside(trauma area), not just internally.

The roast came from the top round area. Thought it had to do with a potential gland but most glands are between the muscle groups. It was wrapped in cling wrap and then freezer paper so don't think that was an issue.  Like I said, the part I tried didn't taste bad, just never saw anything like it. That is even dealing with round worms and bot fly larva in caribou that I got in AK.

Bruise ?

That's what I thought it might be. Was it close to the shot wound? It also looks more cooked. Did you have a thermometer in it during the whole cooking process?

Was the roast brined or cured? Looks a bit like an under cured corned deer I did where the cure didn't reach the middle.
