Kokanee!
« on: May 31, 2020, 01:03:14 PM »
It's been a banner year for the tastiest of fish. I've had more opportunity to fish so far this spring and thought I'd share some photos of our success. We've pulled in 250 kokes so far and we are stuffing the freezer and cupboards with canned fish. Eating a tremendous amount fresh as well. Actually running out of recipes! I haven't kept track of what my friends have kept with me bit I'll bet it pushes our boat total to over 350.

Prepping the smoker to give the fish a light smoke flavor to be canned. I like to get the smoke rolling before I add the fish to reduce the chance of it cooking beforehand.

Now that the smoke is going good I added the fish. About 40 minutes at 180 degrees will warm the fish enough to easily separate the skin from the meat. Doing this now so I'll update as I go.

The next important step is to remove the fat on the back. It can foul the flavor of the meat if not removed.

Nice!

I use to wait till I had about 20 lbs, then smoke them up. After Smoking, skin and debone, then place in one gallon Zip-Lock bags. We would always have one in the fridge to put on Salads or whatever, the rest would go in the freezer.

Got awful spoiled having smoked Kokanee around all the time.
