again as per the other thread grats on your bear! and yeah love that white stripe very nice.
Bear Sausage? as in-ground and seasoned for patties, or as in for like tube-like stuff like pepperoni? etc...
The bear I got years ago I had made into just plain ground sausage wasn't too bad...
I'd like to get another one and maybe try steaks out of but I know it's greasy fro I've had bear roast once and was very Greasy. 
But grats on your sons bear Nice!

what makes it greasy is the fat on the outside, once trimmed bear is very lean. Reason steaks are not preferred is most like rare or med rare steaks and bear is nothing to mess with being under cooked.
