What about all the cholesterol in these foods?
Your body processes Cholesterol along with fats. It breaks it down in your bloodstream. Most commonly, LDLs are elevated but the important measurement there is a particle size of =<1. Particle size of =>2 is where you get in trouble. This is called the LDL particle measurement and should be ordered with standard blood tests. Some plans won't cover it because it's an expensive test.

So I decide to go all in... had been cutting back on carbs for 2-3 weeks and not much was happening. Hadn't read much about it and was doing a few things wrong like drinking milk and cheating here and there.

Monday morning I stated with a keto book and meauring food and the whole works... 299# have not gone over 30carbs/day. Can't believe how fast the hunger cravings went away.

This afternoon I jumped on the scale and it said  291.5... might be just a fluke because I could swing 3# a day either way at any given day... but wow, got my attention.

Oh yeah, definitely no milk. And no fruit or fruit juice.

Isn't it great? I love only having to eat once a day.

Never have measured my food though, or kept track of carbs. But most days lately my goal is zero carbs. If all you eat is meat and eggs carbs aren't an issue.

 Most of that immediate weight loss is water.

When you eat carbs your body carries more water than it does with keto.

Kinda liberating isn't it.


I worked outside all day on chores and I'm not all stove up and sore with inflammation.

Before keto my back would be killing me right now and I'd be hunched over walking like a 90 year old man.

I didn't come in and drink a gallon of ice tea, dig through the fridge or look for leftovers or snacks.

I didn't have to screw around making breakfast or lunch from scratch because we don't buy pre-made foods, I never have ate processed ready made foods.

I had one Gatorade zero that I dilute 50% with water and that's it, since 24 hours ago.
Plus straight water.

You been eating/drinking plenty of salt? My first month on keto I drank a lot of salt water. Mostly using Himalayan pink salt.

I’m a week in on no carbs, usually ever year after the holidays I start counting calories and hike almost daily. Never see great result but am in good “enough” shape and weight by season. When I focus strictly on calories, I am inadvertently piling on the carbs so I thought I’d try. Don’t mess with a scale but I noticed today while working my pants kept falling off my but. I believe.
Just tend your own and live.

It’s a sustainable diet and I’ll never go off of it.
I’m a believer as well and it’s helped me totally eliminate a terrible case of silent acid reflux that damn near killed me.

It’s easy to cook for and really I have no complaints.

Most vegetables are fairly low carb except root vegetables.  Potatoes are a big no-no as they have a ton of carbs and starch.  There are a few root vegetables that are still low carb like turnips and rutebagas (still have to be eaten in moderation at 8g and 12g carb per cup so it can be tough to stay under 50g of carbs).  There are quite a few charts that can show what vegetables are good and bad.  I eat a lot of broccoli, green beans and Brussel sprouts in moderation.  They are all lower carb vegetables (broccoli is 2g net carbs per cup and the other two are around 4g net per cup)

Vegetables with brighter colors like red, orange, and yellow, are usually higher in carbs - tomatoes, carrots, bell peppers, etc. It is a good idea to download a chart which shows the number of carbs per serving of anything you eat. Surprisingly, most nuts are fairly high in carbs. Crackers made from nuts are touted as keto friendly, but when you read the nutritional info, you'll find that you will max out your daily carb limit with a large handful of them. Even keto treats have carbs.

I don't track a bunch, but here is what I generally do for veggies (what I like and I'm not a huge veggie guy):

Unlimited - any salad/leafy stuff, broccoli, cauliflower (particularly riced)

Careful/limited - onions, tomatoes, peppers, salsa, carrots

Nuts I measure (handful) because I can crush a ton without thinking about it.  I usually do unsalted raw pecans because they are lower in carbs and the raw are less appetizing so I'm not tempted to eat more.  I do one serving a day, about 28 grams or a handful.  Sometimes I do other nuts more of a treat, but also only a handful of those.

There are other veggies that work, but I like simplicity 90% of the time.  Once you look it up and do it for a couple weeks you get an understanding of where the carbs are coming from and it gets easier.  Like I said, I don't track so I don't know (or really care) how many carbs a day I get.  In my mind, I don't really care if I'm in ketosis or not but some do.  The more exercise you do, the more carbs you can eat and still be in ketosis from my experience.
