It’s not hard, do it yourself.👍

Sounds like Boss300 is offering to help. :chuckle: If you’ve done it your whole life it definitely is easy. Or if you have somebody with experience show you how a time or two it can be done. It’s a lot different than cutting beef or pork. Hopefully you can find somewhere to take it or somebody close by to give you a hand and teach you how.

Kelsos is the only one so far.
Just talked to them.
They want $2 a pound to cut off bone.
That seems pretty high.
I used to take it to a retired butcher near where a used to live.

TNT has done 15 for me and I have always been happy with the results.  But as stated above, they are not hard to cut.  Plenty of YouTube videos to show you how and charts to guide you.  It’s worth knowing how to do it and for the price of having one cut you can buy all the butcher paper, stamp kit, tape, and heavy plastic wrap.

If you want to do it yourself and need some help or stuff, let me know.  I'm in Arlington and would be happy to loan whatever equipment you need.  You will need plastic wrap (saran), freezer paper and 1 or 2# burger bags, should be available at Cabelas and/or grocery store.  I'm no expert but I do play one in the garage every fall.

We have used quite a few processors over the years, and TNT is by far the best.  They are expensive, but their work is top notch !!
