try sauteeing 1 chopped yellow or sweet onion with a lb of ground elk. Add 2 small cans or 1 large can of tomatoe sauce and also a can of chopped tomatoes. for flavor add 3/4 Cup of brown sugar or molasses, 1 tsp ground cumin, and some chili powder and cayenne pepper to taste. Add 2 cans of pinto beans and 1 can of light red kidney beans. simmer for about an hour...YUM!

thanks for the recipe,I'll give it a try but I have to use deer instead of elk did'nt knock one down last saeson.

I love chili!
2 cans chopped tomatoes
1 sm.can tomato paste, mix together then add
2 cans your choice beans
1 sweet onion chopped
1 red and green bell pepper chopped real good
1 pkg. chili seasoning, mix well and bring
to a real good bubbling simmer add in chopped up deer/elk steak (or cooked ground deer/elk burger.)
serve with cheddar biscuits from Schwans. Enjoy.

i know it sounds weird but try making chili in the oven in a dutch oven or other pan with lid that is ovensafe. i cook by taste so measurements are kinda out tha window. But usually i brown steak with an onion and some garlic in a little oil. then add 1 bottle of good beer. Add 2 cans crushed tomatoes, chili powder, cumin and a sliced up jalapeno. Throw the lid on it and put it in the oven for a couple hours at like 250-275. Add whatever beans you like during the last half hour so they don't turn to mush. it works awesome and you can just throw it in the oven and don't have to stir it. the longer you leave it the better.

I use 2 packages of elk round steak cut into cubes, and browned.
Then 2 or 3 cans of Rotel tomatoes (mild or spicy up to you),
the Texas Red chili seasoning kit (the one in the little brown bag)
1 8 oz. can of tomato paste, stir it all in and let it simmer in a crock pot over night.
Add Kidney beans if you like, I prefer my chili beanless.
The longer you let chili simmer, the more flavor you bring out (kinda like spaghetti sauce). I always make mine 1 day ahead of eating it.

Try adding some smoked sausage and a couple of bay leaves. This S.O.P. around my house and the kids love it with slices of sausage. Theirs actually a cajun chili recipe that I pirated the idea from. Look on Amazon and I think it's a little red book that is called "50 Award Winning Chili Recipes" from 50 states. Great for your own ideas. Never make chili without a cast iron pot.
