Southern Chile is a beautiful place and they have good stag populations but their hunting and gun laws are a bit restrictive, I found that crossing the border to Argentina makes things easier and you can find stags in free range areas or inside “estancias” of several thousand acres plus a bonus of European wild boar.
Supposedly leaving the skin on the beef while cooking it makes it tenderer and moist in the inside, I did not find much of a difference.
